March Break Cooking with The Little Locavore

Last month, we partnered with The Little Locavore, Liam Lewis, to promote our Hero 2018 Fundraising Campaign and to raise awareness about hunger and food waste in our city.

Liam is a 15-year old, Chef-in-Training.  His passion for all things food-related began at an early age, and by the time he was 10 years old, Liam had already started his own food blog, spent his time visiting chefs, bakers and farmers, and learning how to cook.

As a “little locavore”, Liam was inspired to learn that over 90% of the food of the food rescued by Second Harvest is perishable and nutrient-dense, such as fresh produce, dairy and healthy protein.

Over the last few months, we have seen generous donations of potassium-rich potatoes, aromatic onions and crunchy carrots, at the Second Harvest warehouse, and we asked Liam to create a simple recipe with these ingredients that we could share with our agencies (and you!).

Here is the recipe for Liam’s Easy Peasy Potato Croquettes, a fun treat for the whole family to enjoy and a great way to get kids involved with cooking and talking about the importance of access to nutritious food for all.

Ingredients:

  • 6 medium potatoes (washed, peeled and chopped)
  • 3 medium carrots (washed, peeled and diced)
  • 1 medium onion (peeled and diced)
  • 2 cups panko breadcrumbs
  • Salt and pepper
  • Oil or butter to fry

Directions:

  • Bring a large pot of water to boil, add chopped potatoes and cook for 10-12 min until fork tender.
  • Steam diced carrots for 15 mins
  • Mixed warm steamed carrots in with the diced onion
  • Once potatoes are boiled, strain & mash, then add salt & pepper to taste.
  • Mix in carrot onion mix with the potatoes.
  • Cover and refrigerate for 20-30 mins.
  • Heat small fry pan with 1 tbsp of oil.
  • In a medium bowl add 2 cups of panko breadcrumbs and salt and pepper.
  • Portion out 2 tbsp of potato/carrot/onion mash and roll in panko.
  • Place panko rolled potato balls into fry pan and pat down until slightly flattened.
  • Fry for 4 mins / side or until golden brown.

Serve as breakfast, lunch, or a snack with your favourite dipping sauce!
