Chef Darby Piquette is the Chef de Cuisine of ONE Restaurant, Chef McEwan’s contemporary Yorkville hotspot. Chef Piquette has always had an affinity for cooking. At the young age of fourteen, Chef Piquette first entered into the food industry at Maunder’s Food Shop in Aurora. Part bakery, butcher and catering company, Maunder’s was the perfect place for Chef Piquette to try his hand in all areas of the kitchen. Wanting to further his ability and education, Chef Piquette moved to Toronto to enroll in the George Brown College Chefs School. Here, Chef Piquette truly excelled and quickly garnered a reputation for his work ethic and culinary technique. After his first year at chef school, Chef McEwan approached Chef Piquette to join the opening team of ONE Restaurant. Under the mentorship of Chef McEwan, Chef Piquette developed his skill and personal style. Thriving in the fast-paced, high-end Yorkville kitchen, Chef Piquette remained at ONE Restaurant while finishing his culinary degree and quickly rose through the ranks.
At ONE Restaurant, Chef Piquette showcased his dedication to culinary excellence and consistency by making fine-dining approachable. Seeing everything through from raw ingredient to the final plating, Chef Piquette built a following with house-cured fish, made-from-scratch burgers, handmade pastas and slow-cooked mains; never cutting corners and always using the best, seasonal produce available. With this simple ethos, Chef Piquette has made ONE Restaurant an international dining destination. Now, Chef Piquette delights diners with his dynamic seasonal menus. Inspired by his travels and vast cookbook collection, Chef Piquette continues to push culinary boundaries, one dish at a time.
